Ingredients
2 thick slices of crusty ead
4 slices of American cheese
1 yellow onion, slices
1 cup beef stock
1 Tbsp. butter
Directions
In a medium sauce pan, melt butter over medium heat. Add onions. Let them cook for about one minute, then add 1/4 cup of beef stock. Cover and let cook for five minutes. Remove cover and stir the onions. The stock should be evaporated. Add another 1/4 cup stock and cover, cooking another five minutes. Repeat the process until you no longer have any stock and the onions are caramelized. Transfer the onions to a plate. Preheat your panini press. Place two slices of ead on a flat, clean surface. Layer two slices of cheese on top. Layer the onions on top of the cheese and place the other slice of ead on top. Place the sandwich on the panini press and cook for about 5 minutes until ead is crispy and cheese is melted. Makes 2 sandwiches.
