Ingredients
1 large green tomato
1 cup flour
1 cup Panko eadcrumbs
1 tsp. chili powder
2 eggs
salt and pepper to taste
Directions
Slice the tomato into thick slices. Put flour on one plate. Put the eggs, beaten, in a shallow bowl. Combine eadcrumbs and chili powder in a third bowl. Dip the tomato flip into the flour to coat, then into the egg then into the eadcrumbs, coating thoroughly. Heat a sauce pan with 1/2 inch of oil over medium heat. Once the oil is hot, place the tomato slices into the pan. Cook until golden own on one side then gently flip and cook until the other side is golden own. Remove and drain on a paper towel-lined plate. Top with salt and pepper to taste. Serves 2.
