After a trip to early season farmers' markets, you may find your kitchen overflowing with spinach and not many ideas on how to use it. Try this green monster ginger smoothie. A few handfuls of fresh spinach, a knob of ginger and lots and lots of flavors are great for a quick morning pick-me-up.br
Ingredients
1 cup orange juice
1 cup Greek yogurt
1 cup frozen mango pieces
1 handful fresh baby spinach
2 Tbsp. fresh minced ginger
Ice cubes as needed
Directions
Combine all ingredients in a blender. Puree until very smooth. Add ice cubes and blend until it reaches the desired consistency.
