Loading any soup with pearl couscous is guaranteed to make it filling and satisfying. This hearty soup is a play on classic vegetable soup. br
Ingredients
1 cup cooked couscous
3 stalks celery, diced
1 small yellow onion, diced
2 carrots, diced
1 clove garlic, minced
½ Tbsp. butter
1 15-ounce can diced tomatoes
3 cups vegetable stock
¼ tsp. crushed red pepper
Salt, pepper to taste
Directions
In a large pot, melt butter over medium heat. Add in garlic and cook 30 seconds until fragrant. Add in carrots, celery and onion and cook ten minutes until softened. Add in tomatoes, crushed red pepper and vegetable stock and stir well to combine. Bring to a boil then reduce to a simmer. Cook 15 minutes. Add in couscous and cook an additional 15 minutes. Season with salt and pepper before serving.
Makes approximately 4 servings.
