St. Patty's Day is a time when you can get rather inventive with your treats, calling just about anything green or boozy "Irish". These Irish Potatoes, for example, really have nothing traditionally Irish about them. They are, however, sugar-laden, coated in spicy cinnamon and addictive.
Ingredients
¼ cup butter, soft
4 ounces cream cheese, soft
2 ½ cups flaked sweetened coconut
4 cups confectioner’s sugar
Cinnamon for rolling
Directions
Place butter and cream cheese in the bowl of a stand mixer. Mix until combined. Add in coconut and mix until completely combined. Add in sugar and mix slowly so as to avoid spilling the powdered sugar. Mix until completely combined. Chill for 30 minutes. Place a sheet of parchment on a baking sheet. Sprinkle cinnamon into a pie plate, covering the bottom. Using a 1 inch scoop, scoop out balls of the butter mixture. Roll it in your hands until smooth. Roll the balls into the cinnamon, coating completely. Place them on the baking sheet then place in the fridge. Keep cool until ready to serve.
