We love oat flour in these pancakes, sprinkled with toffee chips and studded chocolate chips. It is like double breakfast.
Ingredients
1¾ cup oat flour
1 teaspoon sugar
1 tablespoon baking powder
¼ teaspoon salt
1/2 cup milk
1/2 cup buttermilk
1½ tablespoons canola oil
2 large eggs
toffee chips
chocolate chips (optional)
Directions
In a large bowl, combine flour, sugar, baking powder and salt. In another bowl, whisk together milk. buttermilk, oil and eggs. Pour the wet ingredients into the center of the dry ingredients and whisk until just combined. Heat a skillet over medium high and spray with non-stick spray. Pour approximately 1/3 cup mixture out for each pancake. Top with toffee chips and chocolate chips. When the pancake begins to bubble, flip and cook until light golden own on the other side.
Tip: To keep pancakes warm while they cook, place them on a plate in a 200 degree oven.
