Brunch isn’t just about yummy breakfast foods. It’s also about tasty lunch options. Shrimp and grits are a fun addition and take little time to pull together. br
Ingredients
1 Tbsp. butter
1 Tbsp. olive oil
1 large onion, finely diced
2 cloves garlic, minced
2 cups milk
3 cups water
1 cup grits
1 ½ cups finely grated cheddar cheese
20 medium shrimp, peeled and deveined
Salt and pepper to taste
Directions
Add butter and olive oil to a sauce pan over medium heat. When melted, add onion and cook until soft. Add garlic and cook another minute. Turn heat to high and pour in milk and water. Bring to a boil and slowly whisk in grits. Turn to medium low and cook for 15 to 20 minutes, stirring often. When finished, pour in the cheddar and stir until fully melted. Season with salt and pepper. In another skillet over medium, heat 3 additional Tbsp. of oil. Add shrimp and cook until pink, 1 ½ minutes per side. Scoop grits into a bowl and top with shrimp. Season with more salt and pepper if necessary.
