Tortilla pinwheels are a fun, versatile treat. You can stuff them with any combination of ingredients, from southwestern style to veggie. We went with turkey, tons of veggie matchsticks and a flavorful herb cream cheese. br
Ingredients
4 whole wheat tortillas
4 slices of turkey
4 ounces cream cheese, softened
1/2 Tbsp. basil, chopped
1/2 Tbsp. rosemary, chopped
1 carrot, chopped into matchsticks
1 cucumber, chopped into matchsticks
1/2 red bell pepper, chopped into matchsticks
zest of 1 lemon
1 garlic clove, minced
Directions
Combine softened cream cheese, basil, rosemary, lemon and garlic until well-mixed. Lay the tortillas on a flat surface. Spread each with a scoop of cream cheese. Lay the turkey on top of the cream cheese, then top with equal parts carrot, cucumber and bell pepper. Roll the tortilla into a spiral, then wrap with plastic wrap. Refrigerate for an hour. Slice into rounds and serve.
