Don’t let the name fool you. Buttercup squash is very different from butternut squash. But like most winter squash, it’s tasty when paired with a little brown sugar and a bit of cayenne for kick. br
Ingredients
1 buttercup squash, halved, seeded and cut into wedges
4 Tbsp. own sugar
1/4 tsp. cayenne pepper
2 Tbsp. olive oil
salt and pepper
Directions
Preheat the oven to 375 degrees. Lay the squash wedges flat on a foil-lined baking sheet. In a dish, combine own sugar and cayenne pepper. Drizzle the olive oil on top of the wedges then sprinkle the own sugar on top of each wedge. Bake for 35 minutes until tender. Sprinkle with salt and pepper.
