1 ¼ cups whole wheat flour
1 ½ cups all-purpose flour
2 Tbsp. sugar
2 tsp. baking powder
1 tsp. baking soda
4 ounces (1 stick) very cold butter, cubed
4 ounces feta cheese, crumbled
1 cup buttermilk
¾ cup onion jam

Preheat the oven to 375 degrees. Line a baking sheet with parchment paper and set aside.
In a bowl, combine flours, sugar, baking powder and baking soda. Using a pastry cutter, cut in the cold butter until the flour mixture resembles coarse crumbs. Stir in the feta cheese. Place the mixture in the refrigerator.
Whisk together buttermilk and onion jam until smooth. Take the flour mixture out of the refrigerator.
Stir the buttermilk mixture into the flour mixture. It should be moist but crumbly.
Turn the dough onto a lightly-floured surface. Using your hands, shape the dough into a 9” x 7” rectangle that is about 1” thick.
Using a pizza cutter or a sharp knife, cut the dough into thirds lengthwise and then again widthwise to form rectangles. Cut each rectangle into a triangle. Lay the dough triangles onto the parchment paper.
Bake the scones for 2o to 22 minutes until they are golden own. Remove from the oven and let cool before serving.
Makes 15 scones.
