2 golden beets, leaves removed
4 ounces softened goat cheese
1 Tbsp. freshly chopped thyme
1 Tbsp. freshly chopped chives

Preheat the oven to 350 degrees. Wrap the golden beets in foil and place them on the top rack of the oven. Bake for one hour then remove and set aside until cool enough to handle.
In a small bowl, combine thyme, chives and goat cheese until well mixed.
Once the beet is cool enough to handle, use a paper towel to rub the skin off the beets. Slice the beets into ¼” slices.
Place a beet slice onto your plate. Spread a thin layer of goat cheese spread onto the beet. Place another beet slice on top. Repeat this process until all of your beet slices have been layered.
